Fat Free Cucumber/Dill sauce/dip

Recipe Ingredients for Tzatziki Fat Free

24 oz No Fat Plain Greek Yogurt
1 lemon yields Lemon Juice
2 medium Kirby Cucumber
3 tsp Sea Salt

Recipe Directions for Tzatziki Fat Free

  1. Peel Cucumbers, then cut in half lenghtwise and take a small spoon and scrape seeds out. Discard Seeds. Slice Cucumbers, then put in colander, sprinkle on 1T of salt, let stand for 30 minusted to draw out water. Drain well and blot dry with paper towels.

  2. In food processor with steel blade, add cucumbers, garlic, lemon juice, dill and a few grinds of fresh black pepper. Process until well blended. Stir this mixture into the yogurt. Taste before adding any extra salt. Salt and pepper to taste. Place in refrigerator for at least 2 hours before serving. **This is super important** Let the flavors marry for at least 2 hours!!!

  3. This will keep refrigerated for a few days, but the water will need to be drained off and stirred before each use.
