Chicken breast (2 large) seasoned and steamed with rice; avocado and tomato salad as vegetable

Recipe Ingredients for Typical chicken dinner

12 ounces chicken, white meat
1 cup rice, uncooked
2 cups chicken broth
1/2 onion
1 1/2 avocado
1 tomato
1 teaspoon olive oil
2 teaspoon lemon juice

Recipe Directions for Typical chicken dinner

  1. Sear chicken breasts in non-stick skillet with Pam

  2. Add sliced onion and sauté lightly

  3. Add rice and chicken broth

  4. Cover and steam for 20 minutes until rice is tender

  5. Slice chicken breasts and serve on top of rice

  6. Mix tomato and avocado chunks with drizzle of olive oil and lemon juice, serve as a side vegetable
