Recipe Ingredients for Two-Tomato Basil Olive Tart

90 g unsalted butter
1 tablespoon vegetable oil
3 tablespoons water
1 tablespoon sugar
1/8 teaspoon salt
150 g flour
3/4 cup part skim ricotta cheese
1 egg
1/4 cup basil
12 g sun dried tomatoes
2 tablespoons kalamata olives
2 tomatoes
30 g shredded mozzarella

Recipe Directions for Two-Tomato Basil Olive Tart

  1. Heat oven to 400.

  2. Heat butter. Mix together butter, oil, water, sugar, salt and flour to make dough. Press into pie pan. Prick all over with a fork. Freeze for 15 minutes.

  3. Bake pie crust for 15 minutes. Reduce heat to 350.

  4. Mix together ricotta, egg, chopped basil (reserve 1 tablespoon), chopped sundried tomatoes, and chopped olives. Spread in the bottom of pie crust.

  5. Slice tomatoes. Layer over ricotta mixture. Sprinkle with salt, pepper and mozzarella.

  6. Bake for 30 minutes.

  7. Sprinkle with fresh chopped basil.
