Low carb, gluten-free, quick, easy, filling, and satisfying. Many variations of this muffin can be used, add nuts or berries or both, veggies or breakfast meats or cheese for a more savory muffin, and chocolate, carob, or cocoa powder.

Recipe Ingredients for two minute muffin

2 tbsp Flaxseed Meal
0.13 cup Almond Meal/Flour
1 egg Organic Eggs
0.5 tsp Baking Powder
1 tsp Cinnamon, Ground
1 teaspoon Truvia
1 tbsp Coconut Oil, Unrefined, Organic

Recipe Directions for two minute muffin

grease the inside of a microwave safe coffee mug with coconut oil to prepare cup to release muffin. Mix all ingredients together and pour into greased mug. Pop into the microwave for 1 minute the turn out onto small plate or napkin.
