I used Bloomfield Farms baking mix and it works OK.

Recipe Ingredients for Two-Minute GF Microwave Corn Bread

3 T Pamela's Baking mix
3 T corn meal
2 tsp sugar
1/2 tsp baking powder
2 T milk
1 T oil
1 egg
1/16 tsp salt

Recipe Directions for Two-Minute GF Microwave Corn Bread

  1. Combine dry ingredients.

  2. Combine wet ingredients and add to the dry.

  3. Microwave for 2 minutes on high.

  4. Bread will be done when it springs back as you gently press on the top.

  5. It will not turn brown.
