Recipe Ingredients for Two Egg Fresh Spinach Scramble

1 cup Spinach Leaves
2 serving Egg, Whole
1/4 tsp Spices Ground Black Pepper
1 g Sea Salt
1 tbsp Cream, Sour, Reduced Fat, Cultured
1 serving Extra Virgin Olive Oil
1 serving Nature's Own 9 grain 40 cal per slice enriched bread

Recipe Directions for Two Egg Fresh Spinach Scramble

  1. Prep Time: 2 minutes.

  2. Finely chop 1/2c. - 1c. fresh small leaf spinach, set aside.

  3. Softly scramble 2 large eggs, plain. Set aside.

  4. Cook time: 5 minutes.

  5. In small skillet or omelet pan, drizzle 1 tsp. Extra Virgin Olive Oil and heat. Add chopped spinach, freshly ground black pepper, and sea salt. Toss until spinach is nicely coated with oil and spices. Continue tossing over low heat until spinach is dark in color and is beginning to wilt. Add scrambled eggs and 1 tsp. sour cream to spinach mix. Raise heat to med. high. Continue tossing all ingredients together paying close attention to eggs. When eggs are completely cooked, remove from heat and serve.
