Two-Bean Turkey Chili Recipe

Veggie-heavy chili to warm a brisk winter evening. Use it over baked potatoes as a topping; bake the next day with lightly-boiled cauliflower and noodles for hearty macaroni; or enjoy as is!

Recipe Ingredients for Two-bean turkey chili

1 medium Onion
12 oz ground turkey
1 red pepper
1 pepper jalapeno
1 cup celery
1 carrot
3/4 zucchini
1 green pepper, roasted
32 oz Diced Tomatoes
32 oz stewed tomatoes
16 oz black beans
16 oz Pink Beans
2 1/2 tbsp Butter
3 cups water

Recipe Directions for Two-bean turkey chili

  1. Plug in crockpot and set to 4 or 6 hours, depending on your cooking time

  2. Prepare 3 cups broth with desired spices (recommended: cinnamon, cumin, paprika, black pepper, cayenne, red chili pepper flakes) -- bring to boil and reduce to simmer

  3. Saute onion in 1.5 tbsp butter; add turkey to brown

  4. Fire-roast green pepper over open flame

  5. Chop vegetables; add chopped vegetables and remaining butter to crockpot to soften

  6. Stir in tomatoes and beans

  7. Add in broth, turkey and onion

  8. Serve with cheese, cornbread, sour cream as desired
