Recipe Ingredients for Twice-Cooked Beans

1/4 cup canola oil
1 cup onion, chopped
1 tbsp cumin
4 cups pinto beans
1/4 tsp cayenne

Recipe Directions for Twice-Cooked Beans

  1. Put oil in large skillet over medium cook and cook the onion until golden brown, about 10 minutes.

  2. Add cumin and cook, stirring, for 1 minute. Add beans and mash with a large fork or potato masher. Continue to cook and mash, stirring, until the beans are more or less broken up.

  3. Sprinkle with salt and pepper and add the cayenne. Adjust seasoning to taste.
