Stuffed Twice Baked Sweet Potatoes

Recipe Ingredients for Twice Baked Sweet Potatoes

3 medium (2" dia, 5" long, raw) Sweetpotato
4 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Milk, Lowfat, Fluid, 1% Milkfat
4 oz Light Sour Cream
4 tbsp ICBINB! Light (Soft)
1/4 cup Cheddar Shredded Cheese

Recipe Directions for Twice Baked Sweet Potatoes

  1. Wash potatoes

  2. Bake at 350 for 1 hour

  3. Cool in fridge for 10 minutes

  4. Cut in half lengthwise

  5. Scoop out flesh into large bowl

  6. Mix flesh with butter, milk, sour cream, chopped bacon and onion with hand mixer

  7. Fill shells and bake for 15 minutes until heated through.
