Recipe Ingredients for Twice Baked Sweet Potatoes

3 sweet potatoes
1/2 cup shallot, chopped fine
4 oz light sour cream
2 oz light cream cheese
1 egg
1 tbsp brown sugar
1 tsp black pepper
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp orange extract
2 oz grated Parmesan cheese
1 tsp dried dill

Recipe Directions for Twice Baked Sweet Potatoes

  1. Preheat oven to 375 degrees.

  2. Wash sweet potatoes and stab a few times with a fork or knife.

  3. Microwave potatoes on HIGH for 10 minutes. Allow potatoes to cool.

  4. While potatoes are cooling, put a small, nonstick saute pan on medium heat.

  5. When the pan is hot, add the shallots.

  6. Fry the shallots until they just begin to brown. Remove from heat.

  7. Put the sour cream, cream cheese, egg, and shallots into a large mixing bowl. Stir by hand or with a hand mixer, to make fluffy.

  8. Add the brown sugar, seasonings (except dill), and orange extract, and stir.

  9. Slice the potatoes in half lengthwise. Scoop the potato flesh into the bowl with the cream cheese mixture.

  10. Mix potato flesh into the cream cheese mixture thoroughly.

  11. Spoon potato mixture back into potato skins.

  12. Top each potato with Parmesan cheese and a sprinkle of dill.

  13. Bake potatoes for 20 minutes, or until Parmesan cheese is browned.

  14. Allow to cool for a few minutes, then serve.
