I usually serve this with black beans prepared with cumin and coriander, but if you add some some nuts, it's a nice vegetarian main dish for Thanksgiving.

Recipe Ingredients for Twice Baked Sweet Potatoes

2 medium sweet potato (preferably red)
2 tsp olive oil
1/4 cup vegetable broth
1 cup onion, chopped
1/4 cup barley
1/4 cup wild rice
1/4 cup quinoa
2 tbsp dried cranberries
2 tbsp dried apricots, chopped

Recipe Directions for Twice Baked Sweet Potatoes

  1. Bake the sweet potatoes then slice in half. Scoop out some of the flesh and mash. If the mash is too dry, add the broth, just a little at a time, to make it fluffier. Don't add more broth than necessary.

  2. Cook the grains according to package directions, using water or vegetable broth. Toss the grains together with the dried fruit and gently stir the mixture into the mashed sweet potato.

  3. Fill the skins and bake at 350 until heated through, approx. 15 minutes.
