Recipe Ingredients for Twice-baked sweet potato half

1/2 large sweet potato, baked
1/8 cup craisins
1/2 tsp orange zest
10 1/2 g laughing cow light garlic and herb
1/4 cup 1% milk

Recipe Directions for Twice-baked sweet potato half

  1. Scrub and bake at 400 for 45 min - 1 hour (until soft)

  2. Cut in half and scoop out flesh

  3. Mix with craisins, orange zest, and cheese

  4. Re-stuff potato skins and bake for another 15-min or so

  5. *Alternatively, cook potato in microwave about 8 mins (turn over after 4), then bake after re-stuffing

  6. 1/2 potato per serving
