Great for freezing ahead, these things take some time to make.

Recipe Ingredients for Twice baked stuffed potatoes

10 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Russet, Flesh And Skin, Baked
2 tbsp Butter
0.5 cup FAGE Total 0%
2.5 cubic inch Cheddar Cheese
2 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
1 tbsp chopped Chives
0.5 tsp Pepper, Black
0.5 tsp Salt, Table

Recipe Directions for Twice baked stuffed potatoes

  1. Stab potatoes and bake at 350 for an hour.

  2. Let cool so you can comfortably hold the potatoes.

  3. Halve each potato and scoop flesh out, leaving 1/4" to hold the skin together.

  4. Mash the flesh with the 2 tbsp butter and chives, microwaving if necessary to melt it. I use a pastry cutter- you want it fine.

  5. Stir in the 1/2 c Greek yogurt (0%) or fat free sour cream (I like that the yogurt doesn't have stabilizers in it).

  6. Stuff the potato skins with the flesh mixture.

  7. Cook your bacon in the microwave at 1 min intervals until its crispy.

  8. Snip bacon over potatoes.

  9. Sprinkle with salt and pepper.

  10. Grate cheese and top potato skins with it.

  11. To serve now, heat in the oven until the cheese is melty and brown.

  12. To serve later, wrap and freeze. It takes about 45 minutes at 350* from frozen. I put them in when I turn the oven on, why waste the preheating time?
