Just something I threw together over the weekend... tasted really good!

Recipe Ingredients for Twice-Baked Potatoes

2 medium red potatoes, halved lengthwise
2 tablespoons Light Buttery Spread with Flax Oil
1/4 cup reduced-fat cheddar cheese
1 tsp garlic powder
1/4 cup light sour cream
1 tsp black pepper
1/4 cup reduced-fat cheddar cheese
1 tablespoon dried chives

Recipe Directions for Twice-Baked Potatoes

  1. Preheat oven to 400 degrees.

  2. Clean potatoes, but don't cut them.

  3. Bring potatoes to boil in a pot of water just covering them. About 5-10 minutes depending on size of potatoes. (This speeds up the baking time - even in a microwave!)

  4. Remove potatoes from water and let cool to touch.

  5. Halve length-wise and place skin-side down on a baking sheet.

  6. Bake another 10 minutes or until slightly browned on top and skin is slightly crusty. (It will be soft coming out of the water.) Let cool to touch.

  7. Scoop out flesh of potatoes into a small mixing bowl, leaving enough of skin and sides so potatoe shells keep their shape.

  8. Mix potato flesh with next five ingredients until well mashed and blended.

  9. Spoon equal amounts of mixture back into potato shells, top with remaining cheese and chives.

  10. Bake on baking sheet another 10 minutes or until cheese has melted and flesh mixture has slightly toasted.
