Recipe Ingredients for Twice Baked Potatoes

6 Idaho potatoes
1 salt to taste
1 pepper to taste
2 cups reduced fat sour cream
1/2 cup chives
1 cup cheddar cheese, shredded
1/2 cup margarine, softened

Recipe Directions for Twice Baked Potatoes

  1. Bake potatoes.

  2. Cut potatoes in half lengthwise. Scoop out both halves, placing "meat' of potato in a large bowl. Note: Leave about 1/8" "meat' along the skin of potato so it will hold shape.

  3. Whip the scooped out potatoes in the bowl until smooth. Add sour cream, chives, salt, pepper, cilantro, margarine and cheddar cheese into mixture and blend well.

  4. Scoop mixture back into now hollow potato skins. If desired, may be topped with Parmesan cheese.

  5. Place potato halves on a cookie sheet and bake at 325, until golden (about 30 minutes).
