pretty good...remember to mix pulp while still hot

Recipe Ingredients for Twice baked potatoes

4 large potatoes
2 eggs
4 tbls butter
1/4 cup whipping cream
3/4 cup cheddar cheese, shredded

Recipe Directions for Twice baked potatoes

  1. wash potatoes and cook in oven (400 for 1 hour) or microwave

  2. Cut thin slice from top...scoop out pulp while still hot

  3. beat pulp with egg yolks until fluffy...beat in butter and cream...season with salt and pepper

  4. whip egg whites until stiff and fold into pulp mixture

  5. spoon into skins...sprinkle with cheese

  6. bake at 375 for 15-20 minutes
