Cheesy whipped potatoes twice baked

Recipe Ingredients for Twice Baked Potatoes

4 Russet potatoes
4 tablespoons light sour cream
1/2 cup skim milk
3 tablespoons light margarine
1/2 teaspoon sea salt
1/2 teaspoon pepper
1 cup reduced fat cheddar cheese, shredded

Recipe Directions for Twice Baked Potatoes

  1. Preheat oven to 350 F degrees.

  2. Bake potatoes in preheated oven for 1 hour.

  3. When potatoes are done, allow them to cool for 10 minutes.

  4. Slice cooled potatoes in half, lengthwise, and scoop the flesh into a large bowl. Save skins.

  5. To the potato flesh, add sour cream, milk, butter, salt, pepper, and .5 cup cheese. Mix with a hand mixer until blended and creamy.

  6. Spoon the mixture into the potato skins. Top with remaining cheese.

  7. Bake for another 15 minutes.
