A recipe that is not all that on calories...

Recipe Ingredients for Twice Baked Potatoes

20 oz potatoes
1 tbsp butter
2 tbsp sour cream
1/4 tsp salt
1/4 cup shredded cheddar cheese
4 tbsp skim milk

Recipe Directions for Twice Baked Potatoes

  1. Scrub potatoes. Poke several times with a fork or sharp knife. Bake at 375* for 1 hour

  2. (or microwave for 7 minutes and bake at 400* for 10 minutes)

  3. Increase oven temperature to 425*

  4. Cut each potato in half, lengthwise; scoop our inside, leaving a thin shell.

  5. Mash potatoes until no lumps remain. Add butter, salt, sour cream and beat well until all are combined. ( add milk 1 tbl. at a time if needed.)

  6. Fill potato shells with mashed potatoes. Place on a cookie sheet. Sprinkle with cheese. Bake for 20 minutes or until golden and cheese is melted.
