A good way to use left-over baked potatoes

Recipe Ingredients for Twice Baked Potatoes

1 medium potato, baked
1 tsp. nonfat sour cream
1/2 oz. cheddar cheese, grated
1 black pepper to taste
1 garlic to taste

Recipe Directions for Twice Baked Potatoes

  1. Bake a medium russet potato in a 350 degree oven until done (about 1 hour). Allow to cool.

  2. Slice off a small portion on a long end of the potato.

  3. Scoop out the potato into a bowl, leaving about 1/8"-1/4" on the skin.

  4. Add sour cream, cheese, and seasonings to taste.

  5. Mash with a fork until fairly smooth.

  6. Adjust sour cream if necessary to get the right consistency. Too much mixing or too much sour cream will turn the potato into a glue-like consistency...not very appetizing!

  7. Bake for about 1/2 hr. or until hot, or heat in microwave for 2-3 minutes.
