A semi lighter version of twice backed potatoes.

Recipe Ingredients for Twice Baked Potatoes

6 large baking potatoes
16 oz light sour cream
3/4 cup cheddar cheese
3/4 cup butter
6 slices american cheese

Recipe Directions for Twice Baked Potatoes

Bake clean and scrubbed potatoes for 1 hour at 350 or until insides are soft. Cut the potatoes in half and scoop out the insides placing them into a mixing bowl. Add the cheddar cheese, sour cream, and butter and mix together. Fill the potato halves with the mixture. Place half a slice of american cheese on each half and back for another 20-30 mins.
