My own personal recipe for twice-baked potatoes. Tasted like loaded mashed potatoes wrapped up in a yummy crispy potato shell and topped with cheese. Delicious!!!

Recipe Ingredients for Twice Baked Potatoes

8 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Baked, Flesh And Skin
8 oz Cream, Sour, Cultured
1/4 cup Fancy Mild Cheddar Shredded Cheese
4 tbsp Shedd's Spread Country Crock Churn Style Soft
1 tsp Salt, Table
6 tbsp Real Bacon Bits

Recipe Directions for Twice Baked Potatoes

  1. Lightly cover each potato in butter and salt. Bake at 425 for about 45 minutes. For crispier shell, place directly on oven rack. For softer shell, cover in aluminum foil before baking.

  2. Remove potatoes from oven, and cut out a wide opening in each potato. Scoop out all insides of the potato and place into separate bowl.

  3. Mash potatoes, then add butter, sour cream, salt, bacon bits, and most of the cheese. Mix evenly.

  4. Return potato mixture to potato shells using a spoon. Stuff each one full, then over-stuff with whatever is left. Top each potato with remaining shredded cheese. Place on a cookie sheet and return to 425 degree oven for 10 minutes, or long enough to re-heat all potato mixture on the inside.

  5. Remove from oven, serve warm and enjoy!
