Recipe Ingredients for Twice Baked Potato

700 grams baking potato
2 tbsp. fat free sour cream
2 tbsp. fat free cream cheese
1 tbsp. butter
4 oz. 2% cheddar cheese
1 salt and pepper

Recipe Directions for Twice Baked Potato

Bake 4 potatoes at 375 degrees. Together they should weigh about 700 grams. Bake until a knife will slide in and out with ease. Cut each potato in half and scoop pulp into a bowl. Retain the skin. Add butter, sour cream and salt and pepper. Mash with potato masher or spoon until smooth. Scoop even amounts of mixture back into the potato skins. Sprinkle with evenly with cheese. Place back into the oven for about 10 minutes or until cheese is melted.
