Twice Baked Potato Recipe

Healthy version. Very filling for the Calories... Freezable... If you like, add 2 tbsp fat free sour cream :-)

Recipe Ingredients for Twice baked potato

1 Baked Potato
1 tbsp Chives
1/2 tsp Sea Salt
1 oz Cup Fat Free Cheddar
4 oz Chicken breast, Cubed
1/3 cup Broccoli
1/2 cup Red Bell Pepper

Recipe Directions for Twice baked potato

  1. Bake Potato in 400 degree oven for one hour. (For soft potato skins, wrap in aluminum foil. Remember to stab the potato four times per side for air holes or it will explode.

  2. Cool off.

  3. Cut potato in half.

  4. Carefully scoop out a little in one shell, carefully save that half unbroken.

  5. The other half, mix in chives, sea salt and if you like a little skim milk.

  6. Top with cooked chicken (I bake mine, then cube), peppers, broccoli, and cheese...

  7. TIP: This freezes really well if you need a quick freezer meal for later in the month!!
