Recipe Ingredients for Twice Baked Potato

1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1 pat (1" sq, 1/3" high) Butter
2 tbsp Light Sour Cream
1 oz Cheese
0.13 NLEA serving Carrots, Baby
0.25 cup, chopped Broccoli
1 dash Salt, Table
3 dash Pepper, Black
1 tbsp chopped Chives

Recipe Directions for Twice Baked Potato

Bake potato and let cool. Boil broccoli and carrots until just barely done. Grate cheese. Make a circular slice on the top of the potato and carefully scoop out the inside of the potato into a large bowel. Place skin on a baking tray. To potato in bowel add butter, sour cream, salt and pepper, chopped broccoli, carrots and cheese. Stir together. Scoop mixture back into skins so they are just over flowing. Place in oven at 350 for about 15 minutes to heat through.
