Recipe Ingredients for TVP Tacos

3/4 cup boiling water
1 cup TVP
1/2 onion
1/2 red pepper
1/2 green pepper
1 tsp olive oil
2 cloves of finely chopped garlic
2 teaspoons cumin
1 1/2 teaspoons paprika
1/2 teaspoon chili powder
1/3 cup red kidney beans
1/3 cup black beans
14 oz (420g) canned chopped tomatoes
1/2 teaspoon splenda brown sugar
2 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon ground black pepper

Recipe Directions for TVP Tacos

  1. Pour cup boiling water over 1 cup TVP in a bowl, cover, and set aside for 15 minutes to soak.

  2. Dice an onion, half a red pepper and half a green pepper.

  3. Cook the onion and peppers in a frying pan over a medium heat in 1 tablespoon of canola or peanut oil for 5 minutes. Add 2 cloves of finely chopped garlic, 2 teaspoons cumin, 1 teaspoons paprika and teaspoon chili powder and cook, stirring, for a minute.

  4. Add the soaked TVP, cup rinsed and drained canned red kidney beans, 14 oz (420g) canned chopped tomatoes, 1 cup beef stock, 1 teaspoon brown sugar, 2 tablespoons tomato paste, 1 teaspoon salt and teaspoon ground black pepper, and bring to the boil. Reduce the heat to medium and simmer, uncovered, for 20 minutes, stirring occasionally.

  5. Add fillings and serve.
