Recipe Ingredients for Tuscan white beans

1 pound dried cannellini beans
1/4 cup olive oil
3 cups fennel
2 cups carrots
1 tablespoon garlic
1 cup chicken stock
1 tablespoon sage
1 tablespoon rosemary
2 teaspoons sea salt
1/2 teaspoon black pepper
1/2 cup parmesan cheese

Recipe Directions for Tuscan white beans

  1. Night before, soak beans in bowl with water to cover by 2 inches. Cover and refrigerate overnight.

  2. Next day, drain beans, rinse and place in large stockpot with twice as much water as beans. Bring to boil, lower heat and simmer uncovered for about 45 minutes, until beans are very tender. Skim off any foam.

  3. Meanwhile, heat olive oil in large pan over medium heat. Add fennel and carrots and saute for 8-10 minutes, stirring occasionally, until tender. Add garlic and cook for another minute. Drain beans and add them to vegetables. Add stock, sage, rosemary, salt and pepper, and simmer for 12-15 minutes - stirring occasionally, until creamy. Stir in cheese, season to taste, serve hot.
