Adapted from a Cook's Illustrated recipe that called for dried cannellini beans and pancetta or bacon instead of the turkey kielbasa.

Recipe Ingredients for Tuscan White Bean Stew

6 ounces turkey kielbasa, chopped
1 large onion, chopped about 1-1/2 cups
1 tablespoon extra virgin olive oil
2 celery stalks, chopped about 1 cup
2 carrots, chopped about 1 cup
2 garlic cloves
19 ounces Progresso cannellini beans, 1 can
14 ounces low fat low sodium chicken Broth (1 can)
2 cups water
2 leaves, bay leaves
14 1/2 ounces Del Monte diced tomatoes, 1 can
1 ounce fresh rosemary
10 ounces swiss chard, roughly chopped

Recipe Directions for Tuscan White Bean Stew

  1. Heat oil in soup pot, add chopped kielbasa and cook about 10 minutes to render fat.

  2. Add onion, carrot, celery, cook ten minutes until soft. Add garlic, cook one more minute.

  3. Rinse beans and add to pot, or alternatively add beans and liquid from can into pot. (Rinsing probably reduces sodium from what is shown in the nutrition information.)

  4. Add chicken broth, water and bay leaves, bring to boil, then reduce to simmer for about 30 minutes.

  5. Add diced tomatoes and swiss chard, cook until greens are tender, about 30 minutes.

  6. Season to taste with ground pepper and salt.

  7. Turn off heat, add rosemary and allow to steep for 15 minutes.

  8. Remove rosemary and bay leaves.
