1 medium onion, coarsely chopped
15 oz can pumpkin
3 c Chicken Broth - Light & Fat Free (College Inn)
15 oz white beans, drained and rinsed
1/4 teaspoon oregano
1/8 t salt
1/8 t pepper
6 tablespoons grated parmesan cheese
3 c water

Recipe Directions for Tuscan White Bean Soup - Reduced Sodium

  1. Saute Onions

  2. Add Liquid Ingredients

  3. Add Beans and other ingredients, saving parmesan for last.

  4. Add Parmesan just before serving
