This is a good soup to have on a cold, snowy winter's day. I serve it with some crusty bread, makes for a nice lunch.

Recipe Ingredients for Tuscan White Bean Soup

2 tablespoons extra virgin olive oil
205 gram onion
205 gram carrot
145 gram celery
145 gram red potato
100 gram whole wheat pasta
1 tbs shallots
1 tbs garlic
30 oz (Hanover) Great Northern beans
30 oz chicken broth, 99% fat free, reduced sodium
130 gram Kale
48 oz water
1/4 tsp red pepper flakes
1/4 tsp sea salt
1/4 tsp oregano
1/4 tsp thyme leave
1/8 tsp rubbed sage

Recipe Directions for Tuscan White Bean Soup

  1. Small dice onion, carrot, celery and put into a large soup pot.

  2. Add the olive oil and diced red-skin potato. Stir over medium heat to blend, then add the green beans, cut to about 1-inch length, together with the crushed garlic, the seasonings and continue stirring until vegetables are beginning to cook, about 5 minutes.

  3. Add the chicken broth, white kidney beans (Cannellini) and water. Bring to a boil, turn to simmer, add the pasta and cook until it tests done.

  4. While this cooks, slice the baby spinach into strips, and add to the soup a few2 minutes before removing it from the heat. serve with some good crusty bread.

  5. TYou can add a little more spice, if desired.
