Recipe Ingredients for Tuscan white bean and chicken soup

1 c. white beans
28 oz. canned tomatoes
1 lb. chicken breast
32 oz. chicken stock
1 tsp. olive oil
1 c. water
1 c. carrots, chopped
1 c. onion, chopped
2 tbsp. garlic, minced
1 c. celery, chopped
1 c. frozen spinach
1 tbsp. italian seasoning

Recipe Directions for Tuscan white bean and chicken soup

  1. Sautee chicken in pot with olive oil until cooked and remove, set aside

  2. Sautee garlic, carrots, celery, and onion until start to get soft

  3. Add in canned tomatoes, chicken stock, water, beans, spinach, and seasoning. Let cook on a low boil about 15 minutes.

  4. Turn off stove, stir in reserved chopped chicken. Serve with grated parmesan cheese.
