Yum! Recipe called for an onion and sage and fresh garlic, but I made do substituting extra carrots & celery, basil, extra thyme, and minced & powdered garlic. Will definitely do this one again and add extra spinach next time in addition to the onion and sage (I can't believe I don't have dried sage!).The beans are really tasty too.

Recipe Ingredients for Tuscan Vegetable Soup

15 ounce low-sodium caNnellini beans, drained and rinsed
1 tablespoon olive oil
1 cup diced carrots
1 cup diced celery
1 1/2 cups diced zucchini
1 teaspoon minced garlic
1 teaspoon Garlic Powder
2 teaspoon dried thyme leaves
1/2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
32 ounces vegetable broth
14 1/2 ounce Diced Tomatoes,
2 cups chopped baby spinach leaves
3 1/2 tablespoon grated Parmesan

Recipe Directions for Tuscan Vegetable Soup

Rinse, drain beans. Mash half with a spoon in a bowl. Set aside with spinach. Heat oil in med-high, add vegetables and herbs, salt & pepper and cook for 5 minutes or til tender, stirring occasionally. Add the broth and tomatoes, and bring to a boil. Then add the beans and spinach. Cook until the spinach wilts, about 5 minutes. On top of each serving a whole tablespoon of Parmesan cheese (or a little over!).
