Recipe Ingredients for Tuscan Vegetable Soup

1 1/4 cup eggplant, cubed, peeled
1 cup water
14 1/2 ounce canned tomatoes, unsalted, diced
1/2 cup fresh mushrooms, sliced
1 clove garlic, crushed with press
3/4 cup zucchini, coarsely chopped (1 small zucchini)
1/2 teaspoon dried Italian seasoning
1 dash Salt
1 dash Pepper
1/4 cup spinach, chopped
1/4 cup Parmesan cheese, freshly grated

Recipe Directions for Tuscan Vegetable Soup

  1. In 2-quart saucepan, place eggplant, water, tomatoes with their juices, mushrooms, garlic, zucchini, Italian seasoning, 1/4 teaspoon salt, and 1/8 teaspoon freshly ground black pepper; stir to combine. Heat to boiling on high. Cover; reduce heat to low. Simmer 25 minutes or until vegetables are tender.

  2. Just before serving add spinach and let wilt.

  3. To serve, ladle soup into 4 shallow soup bowls; sprinkle with Parmesan.
