Hearty tomato soup with a tons of flavor. Great way to use your gardens bounty. Lovely starter with dinner, super with a 1/2 sandwich at lunch or by itself as a snack. Low calorie.

Recipe Ingredients for Tuscan Tomato Soup

1 tbs Olive Oil
1 cup onions, sliced
1/2 cup celery, diced
8 oz mushrooms, sliced
1 medium eggplant, diced
2 medium zucchini, diced
56 oz tomatoes with juice
14 oz broth, vegetarian or chicken
8 oz water
2 tsp Italian seasoning
1/2 tsp oregano
1/2 tsp basil
1/2 tsp marjoram
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp pepper
1 pinch baking soda

Recipe Directions for Tuscan Tomato Soup

Saute onions, celery, mushrooms, eggplant and zucchini in olive oil until tender, 8 to 10 minutes. Add Tomatoes, spices, broth and water. Bring to a slow boil, reduce heat to low, cover and simmer 25 minutes. Optional, add 1 pinch of baking soda to reduce acidity and stir. Using a hand blender, coarsely puree soup to desired texture. Flavor intensifies after refrigeration. When reheating, thin soup 3 to 1 with broth if desired.
