Recipe Ingredients for Tuscan Spinach & Artichoke Sauce

6 cups baby spinach, fresh
1 cup eggplant, (artichoke hearts)
1/3 cup Parmesan cheese, grated
3 garlic cloves, crushed
80 ml extra virgin olive oil
100 ml lemon juice
100 ml water

Recipe Directions for Tuscan Spinach & Artichoke Sauce

Blend artichoke hearts, spinach, garlic and water. Cook in a pot on medium heat for 5 mins. Add remaining ingredients and cook for a further 1-2 mins reducing heat if necessary.
