Recipe Ingredients for Tuscan Soup

1 small onion, chopped
1 small carrot, sliced
1 tbsp olive oil
29 oz. chicken broth
1 cup water
3/4 tsp salt
1/4 tsp pepper
4 cups great northern beans, rinsed and drainedd
2/3 cup Pasta, Spiral
3 cups spinach

Recipe Directions for Tuscan Soup

  1. In a two-quart saucepan, over medium-high heat, saute onion and carrot in oil until onion is lightly browned.

  2. Add broth, water, salt and pepper;bring to a boil.

  3. Reduce heat; cover and simmer for 15 minutes or until pasta and vegetables are tender, stirring occasionally.

  4. Add spinach; heat through.
