Hearty soup with sausage, kale and lots of garlic. Use turkey bacon for a leaner version.

Recipe Ingredients for Tuscan Soup

16 ounce Italian sausage
3 potatoes, cubed
1 medium onion, chopped
90 g bacon, lean, 6 slices
5 cloves garlic, pressed
2 cups kale, washed & shredded
4 cups chicken broth
1/3 cup whipping cream
1 pepper to taste

Recipe Directions for Tuscan Soup

  1. Cook sausage, drain any fat, and cut into bite-size pieces.

  2. Cook bacon and onion in soup pot over medium heat until onions are almost clear. Remove bacon and crumble.

  3. Add garlic to onions and cook another minute. Add chicken stock and potatoes. Simmer 15 or 20 minutes, until potatoes are tender.

  4. Add crumbled bacon, sausage, kale and cream. Simmer another 5 minutes. Serve with a warm Tuscan bread.
