Recipe Ingredients for Tuscan Salmon with Rosemary Orzo

6 oz Orzo Dry
2 1tsp Olive Oil
1.5 cup, chopped Onions
1 tbsp Rosemary, Fresh
4.5 oz Fish, Salmon, Atlantic, Farmed
4.5 oz Fish, Salmon, Atlantic, Farmed
4.5 oz Fish, Salmon, Atlantic, Farmed
4.5 oz Fish, Salmon, Atlantic, Farmed
5 tbsp Basil, Fresh
1/4 tsp Sodium-Free Salt
0.13 tsp Pepper, Black
2 clove Garlic
2 cup chopped raw Grape Tomatoes
8 olives Olives
2 tbsp Parsley

Recipe Directions for Tuscan Salmon with Rosemary Orzo

  1. Cook orzo as directed on package until al dente.

  2. Heat oil in a large nonstick skillet over medium heat. Cook 1/2 cup onion (chopped) and rosemary (chopped) until onion softens, 9 minutes. Combine with orzo in a bowl.

  3. Season salmon with 1 tablespoon basil (chopped), salt and pepper. Heat same skillet over medium-high heat. Cook salmon until golden, 5 minutes per side, flesh side down first; set aside.

  4. Add garlic (chopped) and remaining 1 cup onion to skillet; cook until soft, 2 minutes. Add tomatoes (halved) and olives; cook until tomatoes break up, 3 minutes.

  5. Remove skillet from heat; stir in parsley (chopped) and remaining 1/4 cup basil. Season with salt and pepper. Serve fish over orzo; top with tomato mixture.
