Recipe Ingredients for tuscan roasted chicken and vegetables

3 cup Whole Roma Tomatoes, Organic
2 medium Squash, Summer, Zucchini, Includes Skin
1 cup, sliced Fennel, Bulb
1 tbsp Olive Oil
4 clove Garlic
1 fruit without seeds Lemons
3 cup, chopped or diced Chicken, Breast, Meat Only
1 tablespoon Rosemary

Recipe Directions for tuscan roasted chicken and vegetables

  1. cut tomatoes lengthwise into quarters, remove seeds. Cut Zucchini into sticks. Cut fennel bulb into wedges.

  2. put vegetables into baking pan, toss with tsp olive oil.

  3. zest lemon, juice lemon, add garlic, mix and rub on chicken.

  4. place chicken breasts on vegetables, bake at 375 for 30 min.

  5. add rosemary, mix, flip chicken breasts, bake another 30 min.
