A soup inspired by Olive Garden's Zuppa Tuscano, but greatly improved!

Recipe Ingredients for Tuscan Potato Sausage Soup

18 oz Italian sausage
16 oz raw mushrooms
1/2 cup chopped onion
1 tbsp red pepper flakes
1 tsp salt
1 tsp black pepper
10 medium raw red potatoes
10 oz raw spinach
10 oz kale
1/2 pint heavy cream
6 cups homemade chicken broth
4 cups water

Recipe Directions for Tuscan Potato Sausage Soup

In a large dutch oven on medium heat brown sausage, drain, add in sliced or quartered mushrooms and chopped onions, watch and stir when needed. Add in spices and seasonings. When the mix is done and there is a brown crust on the bottom of the pan (pure flavor!) add just a little bit of water to the mixture, and scrap the brown bits off the bottom of the pan. Add the cubed potatoes, cook and stir just for like 5 minutes. Add in broth and water to at lease cover the solids. Cover and cook on low - medium for 20 + minutes (until potatoes are tender). Add in cream, then greens, and cook for 5 - 10 minutes. Serve plain or with a little fresh grated Parmesan or mozzarella cheese. Mmmmm!
