Red Kidney and Cannellini Bean Soup

Recipe Ingredients for Tuscan Mixed Bean Soup

2 oz onion
1 clove garlic
2 tbsp olive oil
4 oz celery
1 oz carrot
6 7/10 oz diced tomatoes

Recipe Directions for Tuscan Mixed Bean Soup

Heat olive oil. Add garlic, onions and celery and sweat for five minutes until soft. Add seasoning of choice. Add carrots and tomatoes and heat for five minutes. Add chicken stock and simmer for ten minutes. Add beans and simmer for additional ten minutes. Serve.
