Tuscan Kale Salad Recipe

Makes 4 servings



Lemon juice softens the raw kale.

Recipe Ingredients for Tuscan Kale Salad

6 cup, chopped Kale
5 tbsp Olive Oil
1/2 cup Panko Bread Crumbs
3 clove Garlic
0.66 cup Parmesan, Grated Cheese
1 lemon yields Lemon Juice

Recipe Directions for Tuscan Kale Salad

  1. Heat2T olive oil in a large skillet until warmed. Add bread crumbs and saute until golden brown. Remove from heat and let cool.

  2. Tear kale into pieces, removing the midrib.

  3. Mix lemon juice, remaining olive oil, minced garlic, salt, pepper and red chile flakes to taste. Pour over kale and toss. Add half of the grated cheese and toss again. Let sit at least 5 minutes.

  4. When ready to serve, toss with bread crumbs and top with remaining cheese.
