This recipe is traditionally made with fresh fava beans, but since it's easier to find frozen edamame, I've substituted them. The softer the pecorino, the better.

Recipe Ingredients for Tuscan edamame salad

1/4 cup edamame, shelled
1/2 oz pecorino
1/2 oz westphlian ham
1/2 tbsp olive oil
1/2 tbsp lemon juice
1/4 tsp parsley
1/4 tsp oregano

Recipe Directions for Tuscan edamame salad

  1. thaw edamame fully (and cook if needed)

  2. dice the pecorino and the ham

  3. toss everything in a bowl
