Recipe Ingredients for Tuscan Chicken Stew

1/2 tsp dried rosemary, crushed
1/2 tsp salt
1/4 tsp black pepper
1 lb skinless boned chicken breast , cut into 1" pieces
1 tbsp extra virgin olive oil
2 cloves garlic, minced
1/2 cup low-sodium chicken broth
15 1/2 ounce cannellini beans, rinsed
7 ounce roasted red peppers , rinsed and cut into 1/2" strips
3 1/2 cups baby spinach
4 tbsp Parmesan cheese, grated.

Recipe Directions for Tuscan Chicken Stew

  1. Combine spices in a bowl and mix well. Add chicken pieces and toss to coat.

  2. Heat olive oil in a large non-stick skillet over medium high heat. Add chick mixture and saute 3 minutes. Add garlic and saute 1 minute. Add broth, beens and bell peppers; bring to a boil. Reduce heat and simmer partially covered for 10 minutes or until chicken is done.

  3. Stir in spinach and simmer 1 minute. Serve with Parmesan cheese at the table.
