Leeks, Savoy Cabbage, mushroom stir fry w/pancetta

Recipe Ingredients for Tuscan Cabbage & Mushroom

2 leeks
3 tsp butter
3 oz pancetta
1 tsp salt
1 tsp black pepper
3/4 cup Swanson
6 c Savoy cabbage
8 oz shiitake mushrooms

Recipe Directions for Tuscan Cabbage & Mushroom

  1. Cut leeks in half length wise; rinse; then cut crosswise

  2. Heat 2 tsp of butter and fry chopped pancetta. Then remove.

  3. Add 1 tsp of butter and fry leeks; add 1/4 c broth. Add salt and pepper.

  4. Add cabbage and remaining broth. Cover and cook until tender. Add salt and pepper.

  5. Serve sprinkled with reserved pancetta.
