Recipe Ingredients for Tuscan Bean Stew

5 cup Black Eyed Peas, Organic
1 tbsp Extra Virgin Olive Oil
6 oz Pancetta
2 stalk, large (11"-12" long) Celery
14 medium Carrots, Baby
1 slice, large (1/4" thick) Onions
14 clove Garlic
32 fl oz Organic Low Sodium Chicken Broth
3 cup (8 fl oz) Water
15 cup, chopped Kale
14 oz Fire Roasted Whole Tomatoes

Recipe Directions for Tuscan Bean Stew

  1. Soak beans overnight in 4 quarts of water and 3 tbsp salt (dissolve). Saute pancetta in medium heat 1 tbsp olive oil until rendered (golden brown). Add chopped vegetables until soft (about 15 minutes). Add garlic, and cook until fragrant (1 minute). Drain and rinse beans. Add beans, broth, water, and bay leaves, and bring pot to simmer. Put lid on and put in 325 F oven for 1 hour.

  2. Drain and rinse tomatoes. Add tomatoes, kale, and rosemary sprig to pot and return to oven for 30 minutes, or until beans are tender. Remove rosemary and bay leaves. Serve!
