bean soup with a mild sausage added, (because we thought the original was too empty, and bland. And hey, it still gets and A!)

Recipe Ingredients for Tuscan Bean Soup w sausage

11 3/5 oz chopped carrots
3 tbsp dried onion
1 tbsp olive oil
40 oz Great Northern Beans, canned
8 cups water (this is either chicken broth or water with bouillon)
3 tsp Italian Seasoning
5 oz spinach
13 2/5 oz Mild Italian sausage

Recipe Directions for Tuscan Bean Soup w sausage

  1. Cook sausage, and slice and quarter to bite sized pieces.

  2. Drain beans

  3. add all ingredients but spinach in big pot

  4. cook until carrots are soft

  5. add spinach 5 minutes before serving. (Can also saute' the spinach in olive oil until wilted and serve on top)
