Tuscan Bean Salad Recipe

The traditional recipe I have calls for fresh fava beans, and double the oil, but peeled edamame are easier to find, and just as good. You can trim the ratio of cheese and meat for a healthier salad, but this is the way I make it for a very satisfying treat.

Recipe Ingredients for Tuscan bean salad

10 oz shelled edamame
4 oz pecorino romano
1 1/2 oz prosciutto
2 tbsp lemon juice
2 tsp oregano
2 tbsp parsley
2 1/2 tbsp olive oil

Recipe Directions for Tuscan bean salad

  1. Mix beans, meat and cheese in a bowl.

  2. In a separate bowl, mix herbs, lemon juice and oil thoroughly.

  3. Toss bean mixture with dressing.
