Pecans, caramel and chocolate wrapped up in a decadent cheesecake batter.

Recipe Ingredients for Turtle Cheesecake

91 grams Cookie Crumbs Chocolate Cookie Crumbs
6 tbsp Butter
14 oz Candies, Caramels
5 fl oz Milk
1 1/2 cup, chopped Pecans
24 oz Cream Cheese
1/2 cup Sugars, Granulated
1 1/2 tsp Vanilla Extract
2 large Egg, Whole
1 cup Chocolate Chips Semi-Sweet

Recipe Directions for Turtle Cheesecake

  1. Preheat oven to 350 F. Butter on 9 inch springform pan.

  2. Toast pecans at 350 F for 6 mins. Set aside. Melt the butter.

  3. Combine oreo crumbs with butter then press into the bottom of springform pan. Place the pan on a cookie sheet and bake for 10 mins at 350 F. Allow to cool.

  4. Melt the caramels in the evaporated milk (use microwave on a low setting). Stir until smooth - pour over cooled crust. Sprinkle 1 cup of the pecans on top.

  5. In a bowl, combine cheese, sugar, vanilla and beat until smooth. Add the eggs one at a time and beat until smooth. Melt 1/2 cup of the choc. chips in the microwave and mix into the cheese mixture. Pour the batter over the caramel layer.

  6. Bake at 350 F for 40 mins or until barely set. Chill over night in the fridge before serving. Sprinkle remaining chocolate chips, and pecans on top and then drizzle with caramel sauce. Serve with cool whip if desired.
