From a nutritional standpoint, the greens are a far better choice than the turnip itself. A cup of boiled greens provides 40 mg of vitamin C (2/3 of the USRDA), about 200 mg of calcium, and nearly 300 mg of potassium. Caution: Beware of the very first time you try eating greens. They are known to cause bloating and gas when you first start eating the.

Recipe Ingredients for TURNIP GREENS - FERTILE CRESCENT GREENS

3/4 cup onion, minced
1 1/4 teaspoons olive oil
1 clove garlic, pressed
2 tablespoons fresh coriander (1tablespoon if dried)
1/4 teaspoon red pepper
1/2 teaspoon salt
1/4 teaspoon allspice
1 cup beans
1 pound ground beef
1 1/2 cups chicken stock
2 1/2 cups turnip greens, washed and chopped fine
3/4 tablespoon lemon juice
1 tomato, chopped
3 ounces sausage
25 grapes

Recipe Directions for TURNIP GREENS - FERTILE CRESCENT GREENS

  1. Sauté onion in oil 5 to 7 minutes in a skillet over medium-high heat. Add garlic, coriander, hot red pepper, salt, and allspice.

  2. Stir 1 to 2 minutes. Add beans and soy crumbles and stir another 2 to 3 minutes until coated and warm. Add vegetable broth.

  3. Cover and simmer on low heat until beans are tender, about 25-30 minutes with fresh beans. (Cooking time with frozen beans will vary. See package.)

  4. Just as the beans are finishing, add the turnip greens, stirring well.

  5. Cover, and steam 5 to 7 minutes. Serve piping hot topped with lemon juice and chopped tomato with a bit of a heated sausage patty on the side.

  6. Serve the plum for dessert.
