This is a Prevention.com recipe. It is soooooo yummy! I usually make a double batch and freeze some for later.

Recipe Ingredients for Turnip & Carrot Soup

1 lb raw turnips
1/2 lb raw carrots
5 oz sweet potato, raw
1 large onion
5 clove garlic
1 1/2 cups water
1 1/2 cups chicken broth
1/2 tsp thyme
1/2 tsp sage
1/4 tsp salt
1/4 tsp black pepper
1 cups 1% milk
2 oz parmesan cheese

Recipe Directions for Turnip & Carrot Soup

  1. Chop up all veggies.

  2. Place veggies in a large saucepan with all other ingredients EXCEPT the milk and cheese.

  3. Bring to a boil over high heat.

  4. Reduce the heat to medium and simmer for 20 minutes or until the veggies are very tender.

  5. In a food processor or blender, puree the soup in batches until very smooth, pouring each batch into a bowl.

  6. When all soup has been pureed, return it to the pan.

  7. Stir in the milk.

  8. Cook over low heat just until heated through.

  9. Remove from heat and stir in the parmesan.
